High Protein Vanilla Muffins

Ingredients

  • 1 cup (120g) all-purpose flour
  • 3/4 cup (90g) NoFuss Essentials Whey Protein (Vanilla Birthday Cake)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1/4 cup (60g) Greek yogurt
  • 1/4 cup (60ml) Cow’s milk
  • 1/3 cup (80ml) honey or maple syrup
  • 1/4 cup (60ml) melted coconut oil or vegetable oil
  • 1 tsp vanilla extract
  • 2 tbsp chia seeds (optional)
  • 2 tbsp natural almond or peanut butter (optional)

  • 3/4 cup (90g) NoFuss Essentials Whey Protein~ 65.5g Protein
  • 1 cup (120g) all-purpose flour~ 12g Protein
  • 2 tbsp Natural almond/peanut butter~ 8g Protein
  • 1 egg~ 6g Protein
  • ¼ cup greek yogurt~ 5g Protein
  • 2 tbsp chia seeds~ 4g Protein
  • 1/4 cup (60ml) cow milk~ 2g Protein
Recipe
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. In a large bowl, combine the all-purpose flour, whey protein powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the egg, Greek yogurt, high-protein milk, honey or maple syrup, melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. If adding chia seeds and nut butter, fold them in at this stage.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
