Recipe
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, vanilla flavoured whey protein powder, coconut flour, baking powder, and a pinch of salt.
  3. In a separate bowl, whisk together melted coconut oil, mashed ripe bananas , honey or maple syrup, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too dry, you can add a splash of almond milk to help bring it together.
  5. Fold in any optional add-ins like chocolate chips, nuts, or dried fruit.
  6. Use a cookie scoop or tablespoon to portion out the dough and place it onto the prepared baking sheet. Use your hands or a fork to flatten each cookie slightly.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
